The quality of ice cream starts with mix formulation. The ideal ice cream mix consists of the following: a properly selected raw materials, balanced composition and perfect processing condition.
Mix Processing
The basic raw material used in making ice cream, namely fats, sugar, stabilizers/emulsifier, and flavors, including water or milk, are to be mixed, amalgamated and processed to get a liquid mix. After ageing, this liquid mix will turn into ice cream.
In mix processing, the following steps should be adopted: preparation, scalding, chilling, freezing and lastly, packing.
Scalding
This method can be achieved by heating up the mix at high temperature and cooling it down as fast as possible.
Cooling
To complete the process, cooling must be swiftly attained.
Freezing
For hour, the ice cream mix must be placed in appropriate container, under slow stirring motion. This process will enable all components to be sufficiently dispersed and amalgamated, and develop processing to incorporate air, as required in the continuous freezer.
